First, forget about the greater-than sign. Then rearrange the equation, and you will get y = x - 2. Graph that.

Then you will need to shade the area either above or below that line. So, pick any point above or below the line, and ask yourself, "Is it true at this point that x - y (that is, the x-coordinate minus the y-coordinate) is greater than 2?"

If the answer is no, then you shade the other side of the line. If the answer is yes, then you shade the side of the line that the point is on.
