It just means that everything is just perfect and without worries. In the past they would have said "fancy free". In describing an attitude, it implies that a person acts like nothing bothers them and they are perfectly happy.

This is an expression that was popular back in the 50's and 60's when I was a little girl that just meant everything is going really good or I am feeling really well. Basically it meant everything was all right or better then all right. To this day when someone asks how are you or how is everything going....I will answer "just peachy". Some younger people will look at me in puzzlement and others will just laugh and some will just look at me....older people will know exactly what I mean....everything is great!

Probably a shortened version of 'Everything is just peaches and cream' ie sweet, smooth and delicate.
You could apply it to a person who has a disposition and/or complexion of a sweet little girl.

Peachy means great, very positive, nothing to complain about. It can, however, also be used sarcastically, in which case it would mean the opposite.
