well the only psych field that I can think of that may relate to environmental issues is evolutionary psychology.
Psychologist play a very important role in controlling diseases.. they are the ones which can help change attitudes about stigma, sexual behaviour etc (In South Africa, where I'm from... lots is being done in the rural areas to educate about AIDS/HIV, and interventions and community involvement is a critical part of this... and psychologists are playing a huge role in getting the message across, and in changing commuity attitudes and behaviour)
Psychologists and Social Workers often perform the same service... providing mental health care to a community... it depends on the psychologist but mostly social workers deal on a more grass roots level with people in a particular community, or field.
To qualify... studying at university is a must... and can take a long time (so be prepared for a long slog)Lots of practical experience is required so perhaps go and volunteer while studying, gives you a great idea on where you would like to concentrate your work when you qualify.
Hope that helps

Psychologists can play a pretty significant role in helping to prevent the spreading of the HIV/Aids virus through many ways.. one of which is creating theories and studies that support a way to help people think safer, counsel them through decison making.
They can act as social workers, and many of them do.
I am not too familiar with animals so i dont really know which area of psych should be studied for that, but i would imagine that it may be more of broader social science maybe even Sociology.
To get into these areas you'll need to go to school and pursue a degree that fits the domain you want to concentrate in. Another way would be to volunteer with an organization that is working towards a purpose you believe in. Sometimes you dont need a degree just a passion... it all depends.
Best of luck

wow not a simple question..lots to ponder.
first the branch of Psychology depends on what has the highest success rate. Not all shrinks are good. Just like doctors or lawyers..etc etc
Aids? I think therapy is needed to everyone...not just aids
Psychologist have to go to school and take the same amount of time as a regular doctor.
10 years of training...its not as glamorous as you think as most shrinks suffer from transference ...high rate of mental problems etc etc

I'm with Danny. If you want to help, adopt some lone souls as your underlings. you get power, and they get accepted. it's a win win situation.
