In the latest version of iTunes, after plugging in your iPod click on the "Photos" tab at the top and modify any settings you wish. You can erase individual folders or all of your pictures.

delete the photos in your ipod cache...

just go to itunes while your ipod is plugged in and you can unclick it where you add play lists etc. then hit apply.
