Well, they did have salt; it was very expensive and placed in an ornate vessel upon the lord's table. If you sat at one of the tables leading off the lord's table, you would be "below the salt".
Wealthy people would eat mainly meat; vegetables were considered fit only for the poor. The poor would have perhaps a rabbit or something poached from the land/forest which they would boil up with vegetables to make a pottage. The rich ate all kinds of animals and birds which we don't eat today, like swans and peacocks, all served up in their feathers and with their heads attached to make them look beautiful. At table, people would eat from trenchers, thick slices of slightly stale bread, and share a "mess", a dish that two people would eat from. This developed into a piece of wood with a depression in it. Forks had not been invented, so one would use a knife, spoon and fingers.
Honey was used for sweetening, and the taste of rather rotten meat (no refridgeration) was disguised by the use of expensive spices like pepper, ginger, cloves, etc.

Dinner - Food and drink generally served at mid-morning between 12 - 2
Supper - Was a substantial meal and food and drink was generally served between 6 -7 and accompanied by various forms of entertainment

folks were poor, so they didnt eat much. Average people in Europe would have eaten bread mostly. They drank beer, not just to get drunk but for nutritional value. They also drank mead, another grain alchohol. These drinks preserve a lot better than bread, so they were consumed often. The rich would also eat meat, often deer or wild boar, whatever was available in the region. Rich folks also drank wine, a drink the Romans introduced to Northern and Central Europe. Here is a tidbit of info - the term "upper crust" comes from the fact that the rich fools in the mid ages ate only the crust, while the servants would get the rest of the loaf.

They did have salt it was a bit expensive though. They ate a large range of foods including meats we do not eat any more (if it flew they ate it) It is easier to tell you what they didn't eat (as many modern foods come from the Americas) such as potatoe, chilli and tomato etc...
They ate fish on Fridays, Onion in winter, a LOT of almonds. The food could be quite complex and strongly flavoured for the wealthier people... It was only bland for the very poor... They cooked with wine , vinegar and ale a lot. They drank a LOT of ale (inc kids!) and or wine -all day every day!

If you refer to the European Middle Ages its a matter of when. Mostly on that time there were people called serfs who ate wheat and rarely meat, they would eat a rotten kind of cheese , also milk and pretty hard bread since on that time they did not have perservatives for foods. The people who ate the best in the middle ages were the nobles who practicly ate the best food like, lots of meat from chicken and pork, or fish depending if they were located on the coast. Though in europe on that time corn or potatoes did not exist in europe until they started transporting them when the people knew of the new world. in the middle ages it all ,mattered who you were. if you were rich you ate meat. quail,duck,mutton(lamb),pig,bread and butter, and each meal could have many courses, i think as many as 12? and veggies were for poor people. if you were lower class you ate from all the different food groups, but don't have much selection. your veggies would be carrots, onions, beets, potatoes. your bread would be made of wheat or Ry. and you would have meat from whatever you raised. (this all only apples to basically central Europe.)
