Are you a teacher?
Have students chose a flavor of Celestial Tea, and do a drawing/painting for it. Their tea boxes are all illustrated with paintings. It would be fun, imaginative and a real-life example of commercial art....and it is cheap to buy an example to show a class.
If it is a fine art project, what about paper making? or Mask making? Select an emotion to convey or request that the mask need both color and texture.
If you need consecutive assignments perhaps a Zine or Graphic Novel. Students could do a number of frames and would need to tell a story.

I remember doing string art in junior high.
String art usually refers to an arrangement of string that forms abstract geometric patterns or patterns that resemble an object, such as a ship's sails, sometimes with other artist material comprising the remainder of the work. The string may be wound around a grid of nails that are hammered into a velvet covered wooden board. Though straight lines are formed by the string, the slightly different angles and metric positions at which strings intersect may give the appearance of Bézier curves. Other forms of string art include Spirelli, which is used for cardmaking and scrapbooking, and curve stitching, in which string is stitched through holes.
