Although it remains contested whether Galileo actually dropped an orange (or any sphere for that matter) from the leaning tower of Pisa, the line is a reference to Galileo's contention, contradicting Aristotle, that heavier objects fall faster. The Beastie Boys are using the Galileo reference to show how adept they are at dropping pearls of scientific wisdom in their lyrics.

Not sure what is meant but I do recognize the reference to an experiment that Galileo was said to have performed by dropping a grape and an orange. They were two things of different weights and he was able to prove that they fell at about the same speed rather than the heavier thing falling faster.
