Clostridium botulinum can occur in improperly canned food. It produces the deadliest biological toxin known to man, botulin. Botulin blocks the receptors for the neurotransmitter acetylcholine, which results in respiratory failure and skeletal muscle paralysis.

Canned food could be contaminated (spoilt) by food borne pathogens. Bacteria which are capable of causing illness in persons consuming the food.

Some of the examples include Salmonella, Campylobacter, Yersinia enterocolitica, Staphylococcus aureus, Listeria monocytogenes, Clostridium perfringens, and Clostridium botulinum (Clostridium botulinum is particularly dangerous because it produces
one of the most powerful known toxins).

A few bacteria (e.g. the genera Bacillus and Clostridium) are capable of producing a body called a
spore inside the cell (functionally spores resemble plant seeds). Bacterial spores are more resistant to adverse conditions such as heat, chemicals, dehydration, and irradiation than the cell itself. Thus, the cell may be killed but the spore may survive.

Among these spore forming bacteria are & typical spoilage bacteria of heat processed canned foods such as the flat sour bacteria (Bacillus steareothermophillus) & some that are capable of causing foodborne disease, such as Clostridium botulinum, Clostridium perfringens, and Bacillus cereus.

If you eat these contaminated foods, you may have one or more these symptom nausea, vomiting, abdominal cramps, diarrhea, headache, fever, chills. Onset is sudden or few hours after consuming the spoilt foods.

Not all food poisoning organisms cause vomiting as a symptom but almost all organisms cause diarrhea. Blood in the stool is seen in several types of food poisoning and is considered a serious symptom. Abdominal cramps are common, even if vomiting is not present. Fever is infrequent but may be seen. Contact a physician if a fever or bloody stools are present.

E-Coli are much common. The onset of symptoms occurs one to seven days after ingestion of a contaminated food. Typical symptoms include watery diarrhea and severe abdominal pain that can progress to bloody diarrhea. Little or no fever is seen.

Botulism can become life-threatening as the muscles used in breathing become paralyzed. Victims who expect the nausea, vomiting and diarrhea typical of ordinary food poisoning often wait too long to get medical help and consequently suffer a more severe illness. If you suspect botulism, get medical help as soon as possible. Antitoxin and good supportive care in a hospital setting have saved many lives.
