Sneezing, could actually cause you death at any time it is the closest thing to death and your heart does stop when you sneeze, There are several things that sneezing can do to cause you to die I know that A friend of mine, her uncle had started sneezing and just couldn't stop and before they could see what was happening he was falling to the floor and when he arrived at the hospital he was pronounced dead because he had sneezed
so hard that he actually had A blood vessel burst in his head and this is a very true story and there has been several people to die from multiple sneezing episodes so yes we all say God Bless You when people sneeze because you never know.

The Black Death - Plague,
Sneezing was an early sign of being infected so sneezing generally meant you were going to die. So "God Bless You" was a polite way of saying "You'll be meeting your maker soon enough".
Although the Pope at the time tried to suggest that blessing the afflicted might save them.

I think it comes from the belief that sneezes where evil spirits. See in Spanish it makes more sense you say salude which means health. But there is nothing wrong with saying God bless you.
