I've never heard of a spelling bee that has any other language except English, although many English words derive from other languages, mostly Latin and Greek. Good luck!!

They (at least the ones in the US) use English.

You might want to visit the Scripps-Howard National Spelling Bee site. They include lists of words that have been previously used, pronunciation guides, and tell where the words originated.

Didn't you get a study list? I'm in my school one and here's the languages:

-Latin
-Arabic
-French
-Asian
-German
-Slavic
-Dutch
-Old English
-New World (Native American)
-Japanese
-Greek
-Italian
-Spanish

You may be thinking they're really hard words but you've probably heard them before. If you get a challenge word they may be difficult and require thought. Good luck!
