Because Fe has d orbitals which can accommodate 10 electrons. Octet means 8 and it is just a rule to help understand stability of configurations.

A rule always has exceptions. Nonetheless, it brings home the point of filling all the valence electrons completely be it 2, 8 or 10 or 14.

In short, for elements with d orbitals, they don't follow octet rule exactly!

possibly because it occurs as the ions Fe2+ and Fe3+, meaning they are missing 2 and 3 electrons.
