I have an old World Book set that my mom bought when I was a kid in 1980. The set is still nice other than the fact that it's old and out dated. I have no need for it at this point but I just can't see myself putting the set in the trash. Does anyone else have any viable alternatives?

Contact the local art department of a local school or college. They might be interested in using the pages for collages.

Contact local recycler to see if they accept books to process for recyled paper.

You could take it to a secondhand bookshop or sell it your self
