Try the Yoko Kanno series, they ALL have great music and they are all very different from series to series (Macross Plus, Wolf's Rain, Cowboy Bebop, Arjuna, Escaflowne, etc). Also try Please Save My Earth, Gasaraki, Brain Power'd, Record of Lodoss War, the original Bubblegum Crisis/Crash series, and the Original Street Fighter II the Movie soundtrack (Japanese, not US version).

my favorite anime song has to be "Voices" by Yoko Kanno (the original japanese one of course, NOT the crappy english version) (It was Macross Plus opneing if not mistaken) I love songs a capella, so beautifull, so perfect.
Also "salala" by Becky (mirumo)
