Temperature, pH and inhibitors.

Each enzyme has a specipfic temperature and pH at which it will be most active. Deviate too far from this, and activity will decrease greatly. That is why, though enzymes are kept in a buffer with optimum pH, they are stored in freezer rooms so they are not active. If they were kept at a high temperature, they would denature, or unravel. Also, there are other enzymes that will inhibit the activity of another, or if what the enzyme acts upon is missing, there will be less activity.
