If I understand your question correctly...its not a coincidence that humans see the frequencies of light that the sun gives off a lot of. Our eyesight is the perfect example of evolution in action. Nature selects eyes that are efficient.

Umm, I'm not sure I completely understand your question, so I'll answer the question I think you're asking...
The Sun emits energy in all parts of the electromagnetic spectrum, but most of its energy is given off in the visible part of that spectrum. It is NOT a coincidence that humans see visible light - we evolved this way to take advantage of the majority of the light given off by the Sun. If our Sun were hotter, our eyes would have evolved to see light of shorter wavelengths, and if it were cooler - longer wavelengths.

Black body radiation is not radiation given off a black (invisible) object. Black body radiation refers to the phenomenon that hot objects in the temperature range of most average stars has a rather uniform light curve of frequency.
We see the light of our sun because all optical systems on our world evolved to take advantage of what we call the visible light spectrum. In fact, most of our sun's radiation is in the visible spectrum, so it only makes sense that our eyes evolved to detect this abundant radiation.
