One slants to the left, the other to the right.

k2tog is simply sticking your needle through 2 stitches instead of one and knitting them both together. This will slant to the right.

ssk is slipping two stitches, one at a time, from the left needle to the right needle (make sure you insert the right needle into the stitch as if you were going to knit it rather than purl it, then slip it off), then inserting the left needle into the front of those two stitches and knitting them together. This will slant to the left.

It might not seem important, but if you're doing a whole line of decreases (like for sleeve openings) it looks nice to have them slant the same direction as the fabric. For example, you'd be using ssk's for the right sleeve opening (because it slants to the left) and k2tog's for the left (because it slants to the right).
