I have to replace a ceiling fixture. There is a stud in the middle for mounting. The new fixture isn't made for that type of setup. Can I buy something to screw onto the stud so I can screw in the new fixture?

If you are in the US, there are several options.
1- If you are talking about the threaded tube (usually 3/8 in diameter) that comes down from a fixture box cover or 4" strap, there are different lengths available [unscrew the old & screw in the new].
2- You can extend the above with a threaded coupling.
3- If you are talking about a real "stud" like a solid threaded screw with the head cut off and waiting for a nut and washer to be screwed onto it, it has to be coming from a strap or plate the same as the above hollow tube.
4- The new fixture (center mounted) should have knock outs for the wires and screws to be used for connecting directly to the fixture box. For a flush mount, remove the fixture box cover and mount the fixture to it.
5- I live in Spain now and have had to hand fabricate a lot of non standard hook ups to mount fixtures to existing fixtures boxes.

Yes, its called a pancake box, about 1/2 in thick screws directly to stud and allows hanging of new fixture even if its heavier.
