Any of the following:
Spa 1998. The crash at La Source was hilarious, and seeing Scumbagger drive into Coulthard again would be priceless. How could he NOT see the rooster tail in front of him? And then Scumbagger blames Coulthard, despite the fact that Coulthard drove the same speed around the curve. What did he expect Coulthard to do, drive off into the gravel?
Monaco, 1996. Normally F1 is a sprint (any racing under 300 miles/500km is a sprint) but this turned into an endurance event, a question of who would finish the race. As the leaders' cars broke one by one, Olivier Panis raced to his lone F1 victory.
Monaco 1984. "Senna was incandescent," Murray Walker said when describing Senna's anger after the race was red flagged one lap before Senna would have passed Prost and claimed his first F1 victory. Driving a fifth-rate car, a rookie Senna outdrove everyone, including Prost, in conditions so bad that fish were seen swimming in the air above the Mediterranean.
Estoril, 1997. Scumbagger wet his pants in the car, screaming that Villeneuve was "F@@KING CRAZY!" for his pass on the outside. In the marbles. Off cambre. Scumbagger was so awestruck, he backed off going through the corner, giving Villeneuve the position. It was a pass that Scumbagger could only dream of making, even in the best Ferrari he ever drove.
Monza, 1982. Alan Jones lost control and crashed into the barrier at 290kmh (180mph) going around Curva Grande, creating a huge ball of black dust. Everyone thought he was dead on impact. Instead, he got out and walked away, calmly undoing his chinstrap and taking off his gloves. After that race, EVERYBODY switched to carbon-fibre chassis.

Spa 98. I don't think there will be a crash like that in any f1 race again, funny that the marshals were giving wreckage to the fans, bet the teams were a bit miffed off about that.
I wouldn't mind seeing Silverstone 99, the one where Schumacher broke his leg. I was at the race and I never saw it from a tv perspective where you see the whole track not just part of it. Not that being there wasn't great!

The asker was talking about the 1997-2002 period. Out of these few seasons, I strongly recommend Spa 1998. From this period, that is my absolutely favorite race. The rain always makes the races more interesting, evening out the field and letting driver skill show. And it was so funny how MS and Coulthard were so stupid to crash into each other like they did (and then Fisichella and Nakano in the same way).

One of the ones that always sticks in my mind is the 1996 (or was it 1997) race in Monte Carlo. As I recall, Oliver Panis won it the race and was only 1 of 5 cars to actually finish the race.

the 1975 race of champions at Brands Hatch, I would have loved to see Tom Pryce beat Lauda, Hunt, and all the "Big" stars of F1. Back then talent was more important than driving for ferrari or mclaren. Tom Pryce had an inferior car, but beat everyone!

Spain 96 with Schummy driving 5 seconds faster than anybody per lap, or Monaco 84 (was Stefan Bellof really coming closer to Senna?)

Most definately Monza 2004, when both Ferraris started or fell toward the back of the pack only to sweep through the field when the rains came and finished 1-2.
Sweet.
