There are some black players in the NHL...only 18 black players reached the NHL between 1958 and 1991. According to the article sourced below:

Then you really don't watch very carefully, says Richard Park and Jarome Iginla. If you're wondering why few Asians play hockey...few Asians play sports period in North America. As far as the 12% of the US's population that is black, they focus mainly on other sports.
It's not a racial thing. It's a numbers thing. Very few blacks play hockey period so odds of many playing in the NHL is low esp. given the miniscule black population in Canada...and almost zero black population in Scandinavian and Eastern European nations.

There are both black and asian players in the league.... Iginla and Kariya are 2 of the best.
Others.... Richard Park, Y. Fukufuji first Japanese raised player played in LA this year... Laracque, Grier, Brashear, Weekes, Braithewaite, Carter.

There are a few asian and black players.
Here's the explanation I've always heard. Hockey is one of the most expensive sports to play as a kid. White people apparently have the most money.
I think there's a lot more too it than money though. It has a lot to do with culture. I think more white people enjoy hockey.
And i'm Stereotyping so i'm gonna quit answering

There are some Asians and Blacks it is just that whites are better and grow up with it more often than others. Most players are Canadian, Russian, Scandinavian, Italian, and others. They all come from where hockey is the national sport while in Afrika and "Asia" soccer (football) is the national sport and thus the sport they strive to participate and excel in.

Anson Carter, Iginla, Mike Grear, Donald Brashear, Laraque, and there are tons of Asian players all the players from the countries that made up the USSR are asian. Now if you were to ask why there are so few black players in the NHL it is because hockey is not the poorer mans sport, it is expesive to play hockey growing up, all the equipment and kid keep outgrowing it, all the other sports can be played rather cheaply basketball baseball football.

All very good answeres but i'm gonna go old school on ya'll. As a goalie myself one of my goalie idols was Grant Fuhr. Grant was the goalie on those great Edmonton Oilers teams.
