The black Interceptor driven by Mel Gibson is a 1973 Ford Falcon XB GT Coupe, a car exclusive to Australia. A limited number of these cars were exported by Ford to New Zealand and the United Kingdom, but never to North America. Since only 949 of that particular model Falcon were ever produced, they have become highly sought after by car collectors on six continents; there are approximately 13 of them that were privately brought over to the United States along with several Interceptor clones assembled from "non-GT" Falcon coupes

Max's yellow Interceptor was a 1974 Ford Falcon XB sedan (previously, a Melbourne police car) with a 351 Cleveland V8 engine with many other modifications. The Big Bopper, driven by Roop and Charlie, was also a 1974 Ford Falcon XB sedan, but was powered by a 302 Cleveland V8. The March Hare, driven by Sarse and Scuttle, was an inline six-powered 1972 Ford Falcon XA sedan (this car was formerly a Melbourne taxi cab).
The most memorable car, Max's black Pursuit Special (often erroneously called an Interceptor after a mechanic in Mad Max 2 identified the car as "the last of the V8 Interceptors") was a limited GT351 version of a 1973 Ford XB Falcon Hardtop — sold in Australia from December 1973 to August 1976 — which was modified by the film's art director Jon Dowding. The Nightrider's vehicle, another Pursuit Special, was a 1972 Holden HQ LS Monaro coupe.
Of the motorcycles that appear in the film, fourteen were donated by Kawasaki and were driven by a local Victorian motorcycle gang, the Vigilantes, who appeared as members of Toecutter's gang. By the end of filming, fourteen vehicles had been destroyed as a result of all the stunts, including the director's personal Mazda Bongo van (the small truck that spins uncontrollably after being struck in the film's opening chase).

The perfect answer for everything you describe is Duel, one of Steven Spielberg's first movies from 1971. It used to be lesser known, but it has become something of a cult hit in recent years. Dennis Weaver is a man trying to get home through the California desert when he encounter the semi-truck from Hell. Incredible suspense with no gore. At the other end of the spectrum is another cult movie, Kalifornia. David Duchovney and his wife are yuppies without much money. He decides to do a book on the locations of famous murder scenes and have his wife do the photography. But they can't make the trip work without another couple, so they get Juliette Lewis and Brad Pitt (in maybe his best acting job ever) as the trailer trash couple from hell. This one is intense, gory, and disturbing in the best sense of the word. Not only is the official story line good; it's fascinating to watch the yuppies try to deal with something resembling real life. In a similar vein is The Nature of the Beast. Lance Henriksen and Eric Roberts play a cat-and-mouse game that will have you guessing until the end. Lots of road and desert scenes here with intense dialog. Finally, in a category all by itself, is David Lynch's Wild at Heart. This is like The Wizard of Oz on acid. Again, it meets almost all the criteria you asked for. Hope you find something here you like. You won't be the same after you see these four relatively little known movies.
