Penn State University has some of the best professors on the east coast for Japanese Studies.

I'd recommend looking at Oriental Studies courses. Lots of universities in the UK offer these. You might also look at such things as Japanese language courses with additional options, such as economics or sociology. Such a combination might well cover a lot of the things you mentioned in your question. I don't know where you are, so I can't be specific as to where you should look.
