Get a job in construction or as a longshoreman - there are no background checks and nobody will care if you have a record as long as you do the job!

I would be totally honest and upfront with who is trying to hire you. If you tell them what you did in the past and how you paid for it, and learned your lesson, they might trust you. However, 2 convistions for theft would make an employer rethink hiring you, since you have the potential for doing it a third time, and possibly with his possessions.
Another thing you could try, if there is a help group for this, sign yourself up and take whatever classes there is out there to show you are a changed person.
I will say, from an outsider looking in, I commend you on turning your life around and your employer might too.

Good Luck

Unfortunately you are in trouble. However lying about it is even worse because they'll find out about it and fire you after the fact.

You're much better off being honest and up front. Tell the truth and hope that someone will take a chance on you.
