Well, the winter solstice is often regarded as the start of winter. The winter solstice is the day where the sun rises the least above the horizon and is the shortest day of the year. Last year in the Northern hemisphere, the solstice was 12/22/06. The actual day depends on the year, but it is always the 21st or 22nd of December.

The 1st of June in Australia. We use the four northern European seasons by convention but start them on the 1st of the month. It is as arbitrary as starting them on the equinoces and solstices and much more convenient when assessing seasonal statistics. Those southern hemisphere countries that use the northern European seasons start winter either on the 1st of June or on the June solstice.
