Cornstarch is actually many different compounds. The Chemical dictionary lists it as 25% amylase and 75% amylopectin. But understand that there are many different sizes and branched configurations for each of these types of polymers. The corn (that the starch is collected from) has a big influence one the composition of the finished product.

The dictionary lists a “waxy” variety (from waxy corn) which contains only branched amylopectin molecules. And then by omission, there must also be a non-waxy variety.

Corn starch is a mixture, but starch is a compound made from many sugar molecules. So the main elements are carbon hydrogen and oxygen. There is a possibility of some nitrogen also and maybe a little sulfur. But basically C, H, O

it's a mixture of starches from plant material (corn). this is from cellulose which is really a polymer of sugar.
