Because your ex always' ( most of the cases anyway) remain special, because you have shared special times with them. Seeing your ex chatting to others, and concluding they are ready to move on, makes people feel a bit awkward. That does not mean you still have feelings for them.

because the ex probably still has feelings for his girlfriend, and wants her back, and doesn't like the girl chatting to other men.

Secretly they still want you to like them. Even though things happened in the past they still want to have you eating out of the palm of their hands. They feel jealous like you've moved...and they don't want you to. They want to be the cool one with all the attention. They think that women don't move, but really men are ones that don't. My advice: flirt and talk to guys as much as you want.

Because men are like children! Selfish and egocentric. Imagine he is 5 years old and you are a fire truck. He has played with the fire truck and moved on to the police car but when his brother comes along and wants to play with the fire truck he has a paddy because it is my fire truck and I am playing with it!
They are also insecure, his pride is hurt that you can just move on. Boyfriends, who needs the hassle?

It's a bloke thing - they are not always good at final closure - though it in no way means that they want to be back with you - well that's my theory.

It's the alpha male thing. They want you to pine over him and be miserable without him. When he sees you talking to other guys, it bruises his ego.
