Will it make a good writing surface? should it have glass over it as well? i am starting with a large old rectangular-top partner's desk. Thank you!

That is Upholstery work. Took me 15 years to even begin to understand what Upholstery work really is.It's pretty basic, just take your time, do the work good, and you will have a fine writing surface.
Research Upholstery a bit so that you have an idea of the handtools and chemicals and whatnot that it takes to accomplish that task. Steam is your friend.

It would be a good idea to cover your leather with glass. You will have a much better writing surface, plus no water stains from someone sitting down a glass without a coaster:) ....you know it's bound to happen, no matter how many times you tell everybody..lol If anybody smokes, always a risk of a burn. Fingernail polish, etc. Plus, if you have kids around, markers & paint are always a threat.
