The first thing I would do is try to find some marking on it that might tell you what kind it is and then look for a data sheet on the web. Otherwise, you are left with trial and error. Pick a terminal that you guess might be the gate. Put an ohm meter across the other two terminals, which we will suppose are the drain and source. Then vary the voltage (maybe + or - 5 volts?) on your suspected gate. If the resistance on the meter changes dramatically when you do that, then you guessed correctly. If not, try another combination.

You probably need to look them up in a databook. It'll be difficult to tell with conventional instruments like a dvm.
