Do not spell it with two s's, for your own child's sake. It would be an inconvenience to spell, not to mention it looks like a mispelling. Elisabeth is lovely, albeit I prefer the Scottish variant, Elspeth. Other stunning variants consist of:
Elisabet
Elisabetta
Elisavet
Elisaveta
Elisheba
Elisheva
Elsabe
Elsabeth
Elspet

I like Elisabeth spelled either way with the "s" or the "z". Yes, they will probably get confused in the spelling, but oh well. I don't like it as much with the two "s"s though. I think that it would be mispronounced as Alyssa-Beth. Which is actually a pretty name too, now that I see it spelled out.
Either way, it seems you can't go wrong.

Elisabeth (ay-lis-a-bet) sounds nice. It's French. It would definitely get confused with Elizabeth and be mispronounced in English-speaking countries. If you spell it Elissabeth, it looks mispelled.

Some people will assume it's with a Z, but personally I prefer the S and would use it if we have another daughter. I believe with the S is the European spelling. (This is what my European MIL, who named her daughter Elizabeth, told me - her relatives always want to spell it with an S) You could always say "Elisabeth with an S" when you spell her name to people. No big deal. My name is Carrie and I always have to spell it for people since it could be Kerry, Keri, Kari, etc.

It may get confused, but it would be a part of Elisabeth's identity to know that she's not like the EliZabeths.
Don't spell it Elissabeth. That not only looks stupid, but may bring people to overemphasise the "SS"!

I think it'll definitely be confused with Elizabeth. There are tons of nicknames that you can get from it, though, so that's always a good thing! My oldest daughter is "Elizabeth" and loves being called different name by different people.

Elisabeth is a beautiful name, and avoids getting the nickname Eliza... ;)
Does work for the nickname Beth... which is adorable.
