It is not uncommon for beginners to knit tightly. 2 things to keep in mind--#1 Relax. Don't hold or wrap the yarn with a lot of tension. You'll come up with a consistent tension with time.
#2: Push your stitches past the tips. After knitting (or purling) a stitch, push it along your right needle past the tip and onto the part of the needle where the diameter is constant.
Stitch size is determined by the diameter of your needle. If you don't push the stitches up onto the fat part of the needle, your stitches will be smaller and tighter than they should be.
Keep at it, knitting gets easier as you gain more experience.

Go to www.knittinghelp.com and take a look at the free online videos. They are a great help in learning to knit. There are 2 styles of knitting Continental and English. If you are having trouble with the one you are using, I suggest watching the videos and trying both ways to see which feels better. With practice you will loosen up. I knit too tightly at first too. Keep trying and check out the videos. They are wonderful.

I find it helps keep slack when I hold that newest loop back from the points while I knit a new stitch. I try to hold it back enough that it develops at least a little lean.
It really helped my problems with tight knitting.

I know what your talking about, i had the same problem when i started knitting, the thing is that you are holding the yarn too tight. i hold the yarn between my thumb and index finger (your pinching fingers)but try different ways to hold the yarn and see what happens. you can also try holding the yarn in the other hand.

...as for the knitting being too tight, how much have you knit??...i've noticed that the first couple of rows that i knit tend to be the most difficult because they are kinda tight...but once i get past that first couple of rows it's a breeze.....

Have you tried using one needle a size bigger .ie say one size 7 and one size 8 .Your tension will become less tight .Some people just have a tighter tension than others .Give it a go .you will be surprised in the difference.

Check with your local arts and crafts supply chain store, such as Michael's Arts & Crafts or Joann Fabrics, or whatever's near where you live. Sometimes they have classes that aren't very expensive.
