Assuming that by "cousin" you mean the child of a parent's sibling, then the relationship is first cousin once removed.
Your second cousin is the grandchild of your own grandparent's sibling.
I grant you that it's complicated.

In some cultures anyone related other than siblings, ascendants and direct decendants are all called cousins. I would call my cousin's child my second cousin. Best wishes.

Unlike diverse languages like Chinese, there isn't anything specific in English to call a child of your cousin. But it should be safe to call him your Nephew or her your Niece... since they'd call you Uncle or Aunt in return.
PS. Second Cousins are the children of your parents' cousins.

Your firstt cousins child is your first cousin once removed, or if it's your second cousins child, then she's your second cousin once removed. (Once removed refers to generation).
If you have a child, then your child and your cousins child will be second cousins.
