The v-shape goes with the body well plus it looks sexy. Besides there isn't a need for panties to to be but so wide.

those are thongs you are talking about and they are shaped like that so there is no visible panty lines in the back that may show through pants or skirts, Not all panties are v-shaped either..

my guess it the V shape makes us females look more shapely. It gives the illusion of being taller too. Just a guess.
