Okay, so lets say I download a song at 128 bits per second from itunes, not so happy with the quality, is there any way to increase the bit rate to a larger size of the same song I downloaded, is this at all possible? If so how?? thanks for your answers :D

Nothing you can do to the song you already have. Songs are compressed using "lossy" compression - meaning the song is analyzed and whatever is deemed "unnecessary" is discarded. However as you have discovered sometime what is discarded is actually necessary! There is no way to recover from your song file what has been discarded.

You will need to find the same song with a higher bit rate (160, 192 or even 256 kbps)

I believe it's how the person "recorded" their MP3. I do not believe that you can change the quality or bit rate. I would just try to download another version of that same song.
