It's important for a couple of reasons.

First, if the unit isn't level then the doors may not work properly. It could sag or rattle, or not close correctly, in which case your stuff won't stay cold.

Second, most frost-free units depend on some drainage into a drip pan underneath, where the water will evaporate. If the refrigerator isn't level, the water may stop in the drainpipe and clog it up.

So there's a little leeway in the design of refrigerators to be not quite exact, but it's definitely important to be at least close to level.

It should be sitting relatively flat. It could affect the defrost water drain and allow water to lay and freeze up around the drain hole and eventually give you a drainage problem. A slight tilt toward the rear is common and sometimes assists the closing of the doors.

It is best to keep it level so as the door will tend to go to the closed position after opened. If it is far off level it could effect the coolant level in the resevoir which is not good .

Fairly important.

You want it level from side to side so the shelves will be level, the door will close easily, and the refrigerator will not rock from side to side.

You want it slightly tilted higher in front, so that when you close the door from the halfway open position, it will 'fall' back and close.

In addition to the other answers, you want it to be level side to side because that may help with any motors/condensor issues. I have seen more than a few refers that were making noise that once they were leveled out, they stopped making the noises.

It's not rocket science but, it should be somewhat level. If you put in a cake pan full of jello to set up, you don't want it running out one end, do you?

It might matter to an ice maker, but that's about it. They usually have leveling feet so it's easy to adjust.
