Well Hispanics know how to cook and I have never ate at a Mexican restaurant where they hold off on the grease. Also the portions are so overwhelming because of their motto,"things in Texas are bigger!" Texas is also so very huge and populated with so many different cultures so you are going to have so many fatty foods. Texas is an awesome state to eat at though.
