Yes, they do.
Most of the people I know who are proud of their ethnic heritage serve some of their "own" foods along with the traditional Thanksgiving fare. I used to work with a girl whose parents are from China, and they have a turkey and all the trimmings, and also chinese food for Thanksgiving.
I guess it's about your family, and the food you like, and what you hold dear, rather than just about pilgrims and pumpkin pies.

I believe that you are referring to Italian-Americans or Americans of Italian descent. Yes, lasagne is often a side dish as is spaghetti. BTW, many ppl in the US of non-Italian descent cook lasagne or spaghetti as a side dish.

My grandmother is Italian, we have never had any kind of Italian food for Thanksgiving. Just your average turkey, cranberry sauce, etc.

Why not? People serve what they want on Thanksgiving.
Remember, they don't celebrate Thanksgiving in Italy.
It is an American tradition.

Could be.
Some Mexicans cook turkey mole instead of chiken mole.
Others make turkey tamales.
Or other Mexican dishes.
What's important is to give thanks...it doesn't matter how.

I (who is part sicilian) serve vegan manicotti and no turkey...although there is sometimes a tofurky....
(fyi it is pronounced man-a-gaut not man-i-cot-ti)
