Quasars
Insect "hive minds"
Plants that seem to communicate with each other
The start of the cosmos (superstring theory and inflation theory)
Plate tectonics and ancient geology

All parts of science can be interesting. It just depends on your tastes and what exactly interests you. I'm more of a biology and earth science person rather than a chemistry or botany person. However, all of it is pretty interesting.

It comes down to what you are interested in. Some people love hunting for giant squid, others want to be an astronaut, and some people love fire so they study chemistry.
