Well, because some people actually slap their knee. I do. I don't slap my thigh. I think some people slap their thigh either because it's closer and easier to slap or because with some people it's huge and easier to slap. Also, knee-slapper sounds cooler. I mean, come on, would you really say, "Ha! That was a thigh-slapper!" That just sounds weird.

Loud knee-clapping sort....
