You should add some more info. If you just got him a few months ago, chances are he's explored his new home, and since there's nothing much to "do" there, he just sits around most of the time... until you do something that suggests to him that there might be food coming, when he gets crazily excited.

If you've had him for more than 9 month,s he may be getting old, or have some sort of parasite.

i had a beta that did that once..he was AWESOME he would jump ou tof the water and back in....it was funny but he would go weird like if he needed his water changed...i bought this stuff at the pet store specially designed for beta fish to keep the water safer longer...it purifies it i think..it came in a yellow bottle and you only use a few drops....when my fish was going "ape" i would change the water and either put a mirror by the bowl or get out my little beta fish finger puppet and me and my fish would play peek-a-boo.

how long have you had him? they are usually the more active if they have more room and when they are younger. it also depends on the fish himself. im watching one of mine go crazy right now. i just changed his water and he is a happy puppy. crazed behavior could come from ammonia, nitrite, or nitrate poisoning too which he could get if you don't to regualar water changes. usually jumping behavior isn't related to anything but jumping. once they figure out how they don't stop though. i guess its fun for them or something. it isn't a sign of trying to escape like it seems.

With the few details you gave, I'd go with temperature is too low, and poor water quality. Or, the poor water quality (high ammonia, nitrites, nitrates)could be causing all the symptoms.

Sounds like nitrite poisoning, you need to change the water more often.
