My husband and I just mulled this over, as he has a culinary degree and I owned a restaurant. We both agree to not do the personalized apron or anything having to do with uniforms, as he's probably already figured all that out.
We think framing his first dollar he makes in a nice frame is a good idea and very traditional. For other little stuff, a nice digital meat thermometer (can never have too many of those!), or a conversion chart. I know he's a chef, but some of the more obscure conversions are tough to remember. And a small pocket calculator. Good for figuring costs quickly.

A really good bottle of wine or a really good bottle of champagne to open and share with you at the close of business the first day. I should add that a really good bottle does not mean the twenty to fifty dollar range it means in the one hundred dollar plus range he is a chef he will know the difference and appreciate it.

I'm assuming since he is a chef he has a full set of professional knives. If not that would make a nice gift, a new knife. Other than that, how about a monogramed chefs shirt that says his name and chef in front of it 'chef george' or whatever his name is. Then your question wasn't completely clear, does he own the resturant or co own? Does he have his own office with a desk? If so then they have wonderful desk accessories that you can have monogramed in mahogany or black marble, something bold but personal. Good luck.

How about a full-length chef's apron in the finest linen available with both the restaurant's name or logo across the bottom half, and then his name or monogram over his heart on the upper portion of the apron?
