2 CuSO4 + 5 KI ---> 2 CuI + KI3 + 2 K2SO4

If the equation you posted is correct, then this is the way to balance it. I resorted to balancing by oxidation-reduction, then by balancing the remaining atoms.

CuSO4 + 2KI --> CuI + K2S04 + (1/2) I2
This should be the original balanced equation
or
2CuSO4 + 4KI --> 2CuI + 2K2S04 + I2

The I2 formed then attaches itself to excess KI
I2 + KI --> KI3

Otherwise, it is very difficult to balance.
