The variations in steps, their intricacy and difficulty, the ease in transition from one variation to another, the rhythmic compatibility of steps to music, and intrepretative value.

There are many things that can make a piece of choreography interesting. My background in dance is mostly classical ballet.
I like classical ballet pieces, but I really like to see other pieces; jazz, modern, ballroom. I love when to see shapes that aren't typically used. (I don't know if that makes much sense.) Such as convolsion, when dancers start standing up and them all the sudden they just start throwing everything and next thing you know they're on the floor. Fall and recovery, random jumps.

I really like when I'm caugh off gaurd by the choreography. Such as when the dancers are walking across the floor and then all the sudden they all fall.

I really like when you see people working together, lifting each other, supporting each other, crawling through each others legs.

Another thing to look for is having different groups doing different things at different times.

it's really awesome when people do turns and not force that last one out because they are supposed to. Great technique will always be something I look for in a piece, no matter what style.

Another thing to look at is are the dancers connecting with the music. Even if the dancers have great technique and execute everything perfectly, if they don't connect with the music and the audience, the piece is pretty much dead.

Hope this helps!

I look for inventive movements and arrangement of those movements. I look for the unexpected. I look for a piece of choreography that has good use of timing, spacial pathways/patterns, and effort/dynamics.

I also look for a piece with a strong structure and choreographic vision....a piece that follows through with its vision.

And lastly (and most importantly) I look at the dancers and their commitment to the movement.

Of course, excellent technique. But in the real world, it also helps to choreogragh something erotic without being pornographic.

Hey, dance is all motion and visuals and as humans, we all relate to the exciting visuals and sensous motions of lovemaking, whether in solo or in pairs. Cha Cha Cha!
