1. Echoes, by Yuki Kajiura, a piano piece accomponied by the sounds of the ocean.
2. Mizu no Akashi+Fields of Hope from Gundam. Beautiful vocals
3. Four Seasons from Inuyasha movie 3 (the anime is interesting, but I'm not a fan)
4. Rem's song in Trigun.
5. Open your heart Reprise by .Hack//Sign (Yuki Kajiura again)
This is currently my favorite and it is simply beautiful and powerful vocally.

You should download all the songs from Gundam SEED, Gundam SEED Destiny, and there are some other songs from Trinity Blood. All of them are good.
