The dew has to "do" (haha) with temperature changes and pressure changes in the weather. For example, when I leave a half full water bottle in my car overnight and come out in the morning and notice water droplets inside the bottle, this is because the pressure inside the bottle is different from outside the bottle. Also because it is winter and the weather is very cold outside compared to inside the bottle.
