Beetroot experiment, what control should I use?

I'm carrying out an experiment to investigate the effect of temperature on the release of pigment from beetroot tissue. I've heard of ethanol as a control, would it work? If not, what other control should I use?

you would replicate the experimental group except for the one variable (temperature) that you are testing for, everything should be identical except the temperature
