i want to start butchering our own chickens but dont know any real good methods for butchering them. usually they say to skin them because its easier and faster. how do you do that? plucking is said to take longer but also leaves the skin on. whats the real big difference? we sell most of our chickens and have decided its to expensive to have them processed else where. any good info on the web? already searched the web cant really find anything.

Look at old cookbooks. Chop off heads to clean, cut & gut, hold by feet & dip into hot boiling water quickly to loosen feathers or prior to skinning. The big difference between skinning and not is that a skinned bird will dry out faster and not store as well if your putting them up (freeze, fridge). Talk to some hunters...the procedure is much the same as what turkey, dove, & duck hunters do. Check out those type of websites.

McMurray hatchery has some great reference books on that subject as well as the tools you will need. I am a firm believer in plucking - skinning tends to give the birds freezer burn after about a week in the freezer. There are some very reasonable drum pluckers out there now if you plan to do it instead of sending them out. They take all the time out of it, to where you can pluck a bird in less then 30 seconds each - after a couple trys to get the hang of the plucker, lol.

I have never skined a chicken but I have plucked them.Get some water boiling and dip the dead chicken in the boiling water for about 2 or 3 minute,makes the feathers come out easier.To kill the chickens you grab them by the neck and with a flick of your wrist pop off the head.The chicken is dead but it will run around for a minute.I have other people tell me that they use a block and a axe to chop off their heads but I never have.They still run around if you chop off the heads by the way.Good luck and good eating

In the Phillipines, we drain the blood then chop its head off, then We skin or pluck whatever u want to do, then we cook it.
