Stress on the headphone jack creates whats called cold solder joints which causes it to go loose and make intermittant contact. You would have to take apart the MP3 player and resolder the joints which have loosened. Just use a low wattage fine tipped soldering iron, heat the joints until the solder fills the gaps and make sure it's solidly in place again. MP3 players are usually very small and full of SMT components so be very careful. A very steady hand is needed and a light with magifying lens would help a lot, too.
