Dictionary definition of a book is:
A written or printed work consisting of pages glued or sewn together along one side and bound on covers
a novel:
A fictitious prose narrative of book length, typically representing character and action with some degree of realism.
My take is the book being the physical structure and the novel being the contents or the story on the pages.

A book is a general term. Lots of things can be a book. A dictionary is a book.
A novel is a specific type of book that contains a story.
