The RCA input plugs are in the 3rd row armrest, drivers side. Just get a power inverter to supply the 120 volts, plug the xbox into the RCA's, use the DVD/AUX button on the head unit to switch between the XBOX and DVD, and you will be all set.

Of course you can. Get a cigarette lighter outlet converter to plug the xbox into. Then instead of the RCA's going from the DVD Player to the screen, use the Xbox's RCA's with the screen. And that's pretty much it. Turn the screen on, put it on the same mode it had to be on in order to watch DVD's, turn the xbox on, and you're suddenly playing xbox in your Odyssey.

The only thing I can think of that you might want to look out for is the xbox taking too much power from the battery (in which case you should buy a bigger battery).
