I am not an expert, but I was a vegetarian for 28 years!
try to blend 2 tbspoons of peanut butter,1 cup of tofu,1 banana,1/4 cup of oats,1cup of soy milk ,and 1 cup of water (ice as desired).
kids love it.And it's full of protein and carbs.It can feel her up for a long time,so don't force anything on her until at least a couple hours later or more.
you can add some cocoa and sugar if wanted.

Please consult a doctor before you go on this diet, hope you dont get into any health problems and blame me for it. listen I am 20 kg overweight for a man and I am a pure vegetarian. Have lots butter, cheese, milk, ice creams, lassi/yoghurt. Bread spreads are also OK. TRy fried vegetables with rice or wheat. you can have a pizza a week if you do not have collestroal or BP. Have fruit juices or milk shakes once a day if you want.

It is always easy putting on weight atleast in my case, very difficult to shed it.

I don't know of a veggie menu, since I am not one. However, add plenty of peanut butter and nuts to her diet, she will gain weight.
