Sautee it in a pan with a little olive oil and minced garlic until it's soft. I like lots of garlic but it's really a personal taste thing.

In India and Pakistan Spinack is made by first letting the spinach in a pot and turning on the heat. It cooks for a long long time until its all steamed and then its put in a blender and mashed. And then the paste is heated again on the stove with fried onions (browned) and the oil of onions is not added to the spinach. Only the onions are. Then red pepper and salt are added.Then after the spinach becomes really paste like and seems good to taste like after about 15-20 mins. Remove from heat. Put some olive oil or regular cooking oil and eat with bread!

Steam it quickly to avoid limp veggies. Afterwards eat up w/lots of lemon juice, or balsamic vinegar.
I also like the fresh salad idea; you don't need to cook it.
Remember to wash it well first.
